Apple Sour Cream Pie

Alright, man...  It's taken me forever and a day to get to this freaking scrumptious pie. I love this pie for a myriad of reasons, and my number one is that it's just plain f'in good. : ) 
Today however, has been a different story. It just seems ick.. it's taken me forever to get anything done. I've taken my meds... blech.. they make everything kind of grey but I'm not trying to kill myself or anything so I'm guessing this is an improvement, heh. 
I've knocked over shit, spilled everything, stepped in it, stepped on it, broken it, dropped it... You fucking name it.. *sigh* I'm just going to hope for pretty pink and blue thoughts and bake a pie. My mother would smile in the Hereafter at a freshly made apple pie. So why not, instead of dwell on all the shit that makes me sad...I'll make a pie. And then give half of it away like I did with the strawberry cuz it's NOT going to be a productive and theraputic blog if I end up eating the whole pie.... I will stop now.. On to PIE MAKING!

I drop my french bread pizza and pie crust on the floor. Well, the dogs got a french bread pizza and my pie crust landed wha... ? wha... ? Tinfoil up. Score. Crisis - barely averted (cuz I really wanted that french bread pizza)
Alright, new topic.. Figured I'd show ya'll a picture of my Mother and Grandmother at Stonehenge with me, lol. I'm sure they'll both get a kick up there over this one. And yes, I really am @ Stonehenge.

But as usual, I digress.
Now, Pie - Pie - Pie 
  Bake prebought - jacked up pie crust (remember to poke holes in bottom)
Chop 3 cups of peeled apples. Cut and slice however you want.
Make Sour Cream Filling for pie 
Pour filling over apples : )
Pie Pie In Oven For 25 mins @ 400 (you might want to cover in tinfoil)
Make Streusel Topping whilst pie is in the oven.
Take Pie out of oven at agreed upon time. 
Add Streusel To Pie (Place Back in oven for 20 mins)
Presto!

Ingredients

Filling:
  • 1 cup sour cream
  • 2/3 cup sugar
  • 2 Tablespoons flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • 3 cups peeled, sliced tart apples (about 1 1/4 pounds of slices)
  • 1 9" unbaked pie shell, frozen or chilled in the freezer for at least 30 minutes (see pâte brisée recipe)
Topping:
  • 1/2 cup brown sugar, packed
  • 1/3 cup flour
  • 1/4 cup butter, room temperature
  • 1/2 teaspoon cinnamon
Mix together all ingredients until the mixture resembes coarse crumbs. Chill until needed in the recipe.

Method

1 Preheat oven to 400°F.
2 Beat together sour cream, sugar, flour, salt, vanilla and egg (can beat by hand). Add apples, mixing carefully to coat well.
3 Put filling into a pie shell and bake at 400 degrees initially for 25 min.
4 Remove from oven and sprinkle with Cinnamon Crumb Topping. Bake for and additional 20 more minutes.
Let cool for a hour before serving.

Cook time - 2 hours Total time - 2 hours 10 mins (Set It and Forget It, honey!) Serves - 10 INGREDIENTS 1 Tbsp EVOO 2 Onions, chopped (Grab the Ninja or food processor) 4 Stalks of Celery, medium dice 2 Carrots, minced 4 Cups diced Butternut Squash 29-oz. can Pumpkin Puree (Watch out for pie filling, it is NOT the same) 1 Medium sweet apple (your choice), small dice 2 Tblsp Brown Sugar (we use a little more) 4 Cups Chicken Stock or Broth 8 Cups Water 3/4 Cup Heavy Cream 1 Tbsp Unsalted Butter INSTRUCTIONS Heat EVOO in pan or soup pot over medium. My friend, Tara, and I had an interesting conversation about where her name came from, and she seemed genuinely fucking surprised that I had any knowledge of Tara (the majestic house from "Gone With The Wind"). And, I really don't blame her. Where we live you're more apt to see sand cranes, piers, and palm trees held up by sticks than you will see majestic southern homes with huge columns. That's where huge columns came from by the way...  Or America's obsession with putting columns up everywhere rather. The movie inspired people everywhere to embrace the south in their soul, throw up some columns, put on a bandanna, and make some collard greens. Now, I'm not even sure collard greens were even in "Gone With The Wind" but they are quintessentially southern none the less. I am from a super small town where if there weren't collard greens on my Granny's table at least three times a week then the world had probably gone to hell in a hand b...
