The Move - The Choice - The Secret - Work

This has definitely been Us. Lately, we have felt trapped in a subway station... Cars zooming in all directions... but which one? Which one is for us? Which car will take us to our destination? What is our destination?
A few months ago we would not have thought all this possible, probable, or even a hopeful situation. If you had told me on New Year's Eve what would be coming in our 2017 care package - I would have hugged onto 2016 for all it was worth. (Which... don't worry.. it packed its wallops as well)


 And then... Opportunity!

   Sometimes the BEST OPPORTUNITIES- SEEM LIKE THE BIGGEST F-UP THAT EVER HAPPENED. Lol.. Having an "Alf" Moment here.... "I Kill Me... Hahahahaha" - Okay, now thats over lets get back to it.
 It took Milton Hershey several tries before he ever got the Hershey's Kiss down..... But the main thing is he told himself... "I am not a FAILURE" - "I Can Do This" - and this is what we are instilling in Piritto and ourselves. For what models are we for her.... if we are thinking ourselves "failures" and never accepting that "failure" can in that Eureaka! Moment.... Change the world. Change your world. Change your View.

It took a long time before I realized the Universe is not "Throwing Rocks Up My Sysphean Hill"( is what I used to call it... ) But - if we can train ourselves to rethink, re-love, re-write, refill that bottle with milk after you just poured hot coffee in the bottle and on yourself at 3am... - If we can just put a smile on our face and say to ourselves... "You know what, Fuck You, Coffee Pot, lets get on to the NEXT THING!"

And Ladies and Gentlemen - The "Next Big Thing" is not giving in to the things trying to pull us down and fill us with unhappy thoughts... but try and see what it is the Universe is actually telling us. Maybe it is telling us to "Go"... for some it will be "stay".... Or "take care of your plant because it's almost dead".... and - REMEMBER, Above all else... The Light of The Universe Loves and Envelopes Us All.

The Change And Along Comes "The Choice"
 Let me back up just a mili-second here... I have just completed my Culinary Program at school, and have an Entrepreneurship Certificate. But let's be real... Ever since our beautiful slice of, Pie, came into the world the most we have really been able to fit into our lives is Pie and School. 
Our slice of, Pie, is now bigger.. in so many ways. She has grown into a beautiful toddler whom everyone adores.

And so you see? Maybe we have outgrown our own surroundings. Maybe we have become fish in need of a new pond. And that is what we are setting about to do. 

We knew we were changing, just like the weather changes and love changes, and everything... changes... That of course will never stop. The sooner we accept nothing stays the same the better off we are. 

As we've been raising our beautiful daughter and appreciating our beautiful Ocean.. it seems our tank has outgrown us.

Ahhh... there. Now we have it. An actual decision. A decision that we must pack up our Kitty Ears and go somewhere that has *gasp* seasons! We had Grand Plans for this place... 

(still do, and this should be helping us move towards our dreams and not away) and so we are finding it difficult to pack the last dish.... put away the last toy.... donate the last box.... Oh, it's happening.. It's definitely happening. 
We have Accepted what the Universe is presenting to us. Either stay and accept insanity in a beautiful place... or GO, GO, GO - and try to find peace in our surroundings elsewhere.

And the answer is "Yes, My Dearest, Pie. We are setting our sights on new surroundings, popping in our favorite Shawn Mullins CD, and hitting the road. For wherever WE are - that is your home. Wherever your family is - there is your peace. When all the bills are paid and we are snuggled into bed watching our Netflix and Hulu that is a bit of our security blanket (cuz fuck cable.. REALLY) - THIS - this - this... is where memories are made and dreams really come from. 
For FAMILY will always be the most important thing.

 As long as you've got Us, you've got someone babe! We love you Infinitely and that has been the crux of hard decision making. Making the right decisions for you, our beautiful child. Mama could live in the Arctic, and Dada could live in the Bahamas, but nothing in the world would ever be right without you."

And so - Once we've prioritized the needs of the Growing Slice Of Pie Vs. Our Own Selfish and Shallow Needs - Pie comes first, always and forever.

While we may be physically relocating to a different shore.. There is still water (there is not a place on Earth that can keep us from water. Whether it be Ocean, Lake, Pond, or River - You will find us there.)

"Vanilla Heart-Attack Shaped Cake"

Eat at Your own Risk! (lol) Yummo! I really can't stop gushing about this cake, ya'll. Literally... they had to keep it away from me so I wouldn't sleep eat it, and give myself a heart attack from eating it. And, by the way - every piece was worth every palpitation.     "Autumn is a second spring when every leaf is a flower." -  Albert Camus Pumpkin & Butternut Squash Soup  Prep time - 10 mins (Yea, loving that!) Cook time - 2 hours Total time - 2 hours 10 mins (Set It and Forget It, honey!) Serves - 10 INGREDIENTS 1 Tbsp EVOO 2 Onions, chopped (Grab the Ninja or food processor) 4 Stalks of Celery, medium dice 2 Carrots, minced 4 Cups diced Butternut Squash 29-oz. can Pumpkin Puree (Watch out for pie filling, it is NOT the same) 1 Medium sweet apple (your choice), small dice 2 Tblsp Brown Sugar (we use a little more) 4 Cups Chicken Stock or Broth 8 Cups Water 3/4 Cup Heavy Cream 1 Tbsp Unsalted Butter INSTRUCTIONS Heat EVOO in pan or soup pot over medium. Sauté the chopped butternut squash, onion, celery carrot and apples (we like caramelize these with a pat of butter added) Whisk Stock and Puree together and Pour in water to deglaze, and add brown sugar Sa...

"Ya Don't Have To Be From Tara" Collard Greens

My friend, Tara, and I had an interesting conversation about where her name came from, and she seemed genuinely fucking surprised that I had any knowledge of Tara (the majestic house from "Gone With The Wind"). And, I really don't blame her. Where we live you're more apt to see sand cranes, piers, and palm trees held up by sticks than you will see majestic southern homes with huge columns. That's where huge columns came from by the way...  Or America's obsession with putting columns up everywhere rather. The movie inspired people everywhere to embrace the south in their soul, throw up some columns, put on a bandanna, and make some collard greens. Now, I'm not even sure collard greens were even in "Gone With The Wind" but they are quintessentially southern none the less. I am from a super small town where if there weren't collard greens on my Granny's table at least three times a week then the world had probably gone to hell in a hand b...
