Grandma's Dinner In A Pumpkin - Winds of Change

We are going through a transitional time here at the #Crazy #Blog House! We have finished with Culinary School, and have an Entrepreneurship Certificate and we've had a great time living by the beach and getting an education. The times they are a changin' tho and it looks as if we about to explore some new pastures! Kitty Ears, Pretty Pie, and I are about to see where the day takes us..

Because of such change.. I always love making recipes from my Grandma, and so I bring you - Grandma's Dinner In A Pumpkin.

I just made this for a crowd of 250 people in culinary school and we hardly had a spoonful left. My Chef even got some emails with others wanting the recipe... Boy, was I proud that Day. Grandma passed in January 2016 and it has been a tumultuous time for sure...However..

So here it is... :)

Grandma's Dinner In A Pumpkin. 


 
Ingredients
  • 1 medium pumpkin
  • 1 onion, chopped (sautee in butter)
  • 1 box baby portabella mushroom (sautéed in butter)
  • 2 tablespoons vegetable oil (for oiling the pumpkin)
  • 2 lbs ground beef
  • 2 tablespoons soy sauce (my family prefers at least 1tablepoon more)
  • 2 tablespoons brown sugar (This is one of the top secret ingredients!)
  • 1 (4 ounce) can sliced mushrooms
  • 1 (15 ounce) can cream of chicken soup
  • 1 12 cups cooked rice
  • 1 (8 ounce) can sliced water chestnuts (our family likes two cans)
Directions
  1. Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.
  2. Preheat oven to 350°F (175°C) In a large skillet sauté onions in butter until tender.
  3. Add meat and brown.
  4. Drain drippings from skillet.
  5. Add soy sauce,onions, mushrooms, brown sugar and soup.
  6. Simmer 10 minutes, stirring occasionally.
  7. Add cooked rice and water chestnuts.
  8. Spoon mixture into cleaned pumpkin shell.
  9. Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet.
  10. Bake 1 hour or until inside meat of the pumpkin is tender.
  11. Put pumpkin on a plate.
  12. Remove pumpkin lid and serve meat.
  13. For your vegetable, scoop out pumpkin and serve.

    "Autumn is a second spring when every leaf is a flower." -  Albert Camus Pumpkin & Butternut Squash Soup  Prep time - 10 mins (Yea, loving that!) Cook time - 2 hours Total time - 2 hours 10 mins (Set It and Forget It, honey!) Serves - 10 INGREDIENTS 1 Tbsp EVOO 2 Onions, chopped (Grab the Ninja or food processor) 4 Stalks of Celery, medium dice 2 Carrots, minced 4 Cups diced Butternut Squash 29-oz. can Pumpkin Puree (Watch out for pie filling, it is NOT the same) 1 Medium sweet apple (your choice), small dice 2 Tblsp Brown Sugar (we use a little more) 4 Cups Chicken Stock or Broth 8 Cups Water 3/4 Cup Heavy Cream 1 Tbsp Unsalted Butter INSTRUCTIONS Heat EVOO in pan or soup pot over medium.
