We have finished with Culinary School, and have an Entrepreneurship Certificate and we've had a great time living by the beach and getting an education. The times they are a changin' tho and it looks as if we about to explore some new pastures! Kitty Ears, Pretty Pie, and I are about to see where the day takes us..
Because of such change.. I always love making recipes from my Grandma, and so I bring you - Grandma's Dinner In A Pumpkin.
I just made this for a crowd of 250 people in culinary school and we hardly had a spoonful left. My Chef even got some emails with others wanting the recipe... Boy, was I proud that Day. Grandma passed in January 2016 and it has been a tumultuous time for sure...However..

Grandma's Dinner In A Pumpkin.
Ingredients
- 1 medium pumpkin
- 1 onion, chopped (sautee in butter)
- 1 box baby portabella mushroom (sautéed in butter)
- 2 tablespoons vegetable oil (for oiling the pumpkin)
- 2 lbs ground beef
- 2 tablespoons soy sauce (my family prefers at least 1tablepoon more)
- 2 tablespoons brown sugar (This is one of the top secret ingredients!)
- 1 (4 ounce) can sliced mushrooms
- 1 (15 ounce) can cream of chicken soup
- 1 1⁄2 cups cooked rice
- 1 (8 ounce) can sliced water chestnuts (our family likes two cans)
Directions
- Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.
- Preheat oven to 350°F (175°C) In a large skillet sauté onions in butter until tender.
- Add meat and brown.
- Drain drippings from skillet.
- Add soy sauce,onions, mushrooms, brown sugar and soup.
- Simmer 10 minutes, stirring occasionally.
- Add cooked rice and water chestnuts.
- Spoon mixture into cleaned pumpkin shell.
- Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet.
- Bake 1 hour or until inside meat of the pumpkin is tender.
- Put pumpkin on a plate.
- Remove pumpkin lid and serve meat.
- For your vegetable, scoop out pumpkin and serve.
